Potato and Carrot Stuffed Chapati with Lentils Recipe:

Ingredients:
– 2 medium-sized potatoes, peeled and diced
– 1 carrot, peeled and grated
– 1 cup all-purpose flour (white)
– 1 cup atta (whole wheat) flour
– 1/2 teaspoon salt
– 1/2 teaspoon sugar
– Water, as needed
– Oil or ghee, for cooking
– Lentils, cooked (any variety of your choice)

Instructions:

1. Start by cooking the potatoes: Place the diced potatoes in a pot of boiling water and cook until they are tender. Drain the water and mash the potatoes using a fork or potato masher. Set aside.

2. In a mixing bowl, combine the all-purpose flour, atta flour, salt, and sugar. Mix well.

3. Gradually add water to the flour mixture and knead until you have a soft and pliable dough. The amount of water needed may vary, so add it gradually until the dough comes together. Knead for about 5-7 minutes until the dough is smooth.

4. Cover the dough with a damp cloth and let it rest for about 15-20 minutes.

5. Meanwhile, mix the mashed potatoes and grated carrot together in a bowl. Season with salt and pepper to taste.

6. After the resting time, divide the dough into small lemon-sized balls. Take one ball and roll it out into a small circle using a rolling pin and some flour for dusting.

7. Place a spoonful of the potato and carrot mixture in the center of the rolled-out dough circle. Fold the edges of the dough over the filling, sealing it completely. Gently flatten the stuffed dough ball.

8. Roll out the stuffed dough ball again into a larger circle, ensuring the filling is evenly distributed. Repeat this process with the remaining dough balls.

9. Heat a tawa or griddle over medium heat. Place the rolled-out chapati on the hot tawa and cook for about 1-2 minutes on each side, or until golden brown spots appear. Brush a little oil or ghee on both sides while cooking.

10. Once cooked, remove the chapati from the tawa and keep it warm in a clean kitchen towel. Repeat the process with the remaining stuffed dough balls.

11. Serve the potato and carrot stuffed chapati hot with cooked lentils on the side. Enjoy!
